Cooking instructions

Making the pumpkin dough

  • Warm the ⅓ cup milk and the 2 tbsp butter together.
    • Should be warmed until the butter is just melted. It should not be hot.
  • Combine the pumpkin puree, sugar, nutmeg, and salt in a large bowl.
  • Add in the warmed milk/butter, egg, and yeast, and whisk until combined.

  • Mix in 1 cup of flour for 1 minute, remembering to scrape the sides of the bowl as well.
    • You can whisk it, but it will be easier with at least a hand mixer if you don’t have a standing mixer. My cheap-o hand mixer worked great for this pumpkin cinnamon rolls recipe.
  • Add remaining 1 and ⅔ cup of flour and beat for 1 more minute.

  • Lightly flour your kitchen counter, and knead the dough for 5 minutes.
    • If too sticky, add small amounts of flour in as needed.
    • The dough should remain soft and slightly tacky.
  • Grease the bottom and sides of a large bowl and place your dough inside.
  • Cover the bowl with a kitchen towel, paper towel, or aluminum foil.
  • Let it rise for 2 hours, until doubled.

  • Once the dough has risen, lightly flour your counter and roll the dough into approximately a 12×24-inch rectangle.

Cooking the skillet pumpkin cinnamon rolls

  • Preheat the oven to 350°F / 175°C.
  • Get your aluminum foil and pre-tent it in the shape of whatever cookware or bakeware you are using. (How to tent aluminum foil)
    • We will be tenting the pumpkin cinnamon rolls later, and trying to tent a hot pan will not be fun.
  • Bake for 15 minutes (do NOT tent it for this bake time).
  • After you remove it from the oven, tent the skillet with aluminum foil to prevent the tops from cooking too quickly.
  • Put back in the oven and bake for an additional 10-15 minutes.

A Pumpkin-Filled Fall Breakfast

As the air starts to chill, our mornings also start to slow down. With mornings taking a little longer to start, this is the perfect time to test out a new breakfast – or probably more accurately, a brunch – recipe.

Baking from scratch is an investment in deliciousness. And this pumpkin cinnamon roll recipe is no exception.

Most of the time you will spend on this recipe is just waiting for the dough to rise. But it’s so worth it.

That being said, instead of waking up earlier to get this baked and ready before everyone else wakes up, let everyone start their day and have a delicious brunch.

Once you dole out these rolls, everyone will be glad they waited!
