So let me share this quick, simple, easy, and healthy breakfast skillet recipe that is packed with protein to help start your day off right.
Quick and Easy Breakfast Skillet Recipe

What you’ll need
- 1 lb ground pork sausage
- 2 boxes of Jiffy cornbread mix
- 6 eggs
- 2/3 cup milk
- 1 bell pepper
- 1 cup of shredded cheese
- 1 tsp onion powder
- 1 tsp garlic salt
- 1/2 tsp black pepper
- 1 green onion to top
Total prep and cook time = ~45 minutes

How to prepare
- Preheat oven to 400 degree Farhenheit
- In a large, stovetop and oven-safe skillet, brown 1 pound of ground pork sausage
- I used the non-stick Everyday Pan from Gourmetific. It has a detachable handle so it makes it easy to go from stovetop to oven.
If you do not have a skillet that can transfer from stovetop to oven, you will just have to transfer to an oven-safe pan at the end.

- While cooking the pork, prepare both Jiffy mix boxes in a mixing bowl
- Combine 2 boxes, 2 eggs, and 2/3 milk
- Add 1 tsp of onion powder to Jiffy mix
- Add 1 tsp of garlic salt to Jiffy mix
- Add 1/2 tsp of black pepper to Jiffy mix
- Dice 1 green onion, and set aside for topping at the end

- Dice 1 bell pepper
- Put half in Jiffy mix
- Set the other half aside to top at the end
- Once pork sausage is brown, put in the Jiffy mix bowl

- Add 1/2 cup of shredded cheese to Jiffy and pork sausage mix
- Once all mixed, transfer from the mixing bowl back to the large, oven-safe skillet
- This easy breakfast recipe is almost complete!

- Cook 10-13 minutes
- After this cook time, use the back of a mixing spoon to make 4 small pockets/divets in the mix
- Crack 4 eggs (one in each divet) on top of the mixture
- Cook an additional 5 minutes
- After this cook time, add remaining 1/2 cup of shredded cheese on top
- Cook an additional 3-5 minutes until eggs are set
- Take out of oven, add remaining bell pepper and green onion
- Your quick and easy protein packed breakfast skillet is ready to serve!
In total, this meal should take around 45 minutes to prepare. And it makes plenty for a family of four! Plus if you have leftovers the next morning, add some sour cream on it and it makes a great second-day breakfast.
